Shanxi Linfen | Glutinous Rice Wine of Hongtong

First appearing at a snack stall in the city of Hongtong, at the southern foot of Huoshan, the fermented glutinous rice wine of southern Shanxi is famous all over the world and has a history of over a hundred years.

Every year on the 18th day of the 3rd month of the lunar calendar, the temple fair attracts continuous sightseeing tourists. As a result, the thirst-quenching and delicious fermented glutinous rice wine is produced.The reason for the fame of Hongdong fermented glutinous rice wine is that it uses Huo spring water and glutinous rice grown under the irrigation of this water, as well as the unique stove and peculiar making method.

To prepare the Hongdong fermented glutinous rice wine, you first need to create a special wind box stove, resembling a cast iron stove, with a mouth diameter of about 26 centimeters. In front of the stove chamber, it is necessary to weld a section of iron smoke pipe approximately 33 centimeters long, with a diameter of 3.3 centimeters at the front, gradually widening towards the back.  A large brass ladle is then required .Prepared with unique ingredients and utensils,the Hongdong fermented glutinous rice has a pure color, authentic flavor and lingering fragrance.

After more than a century of development, the Hongdong fermented glutinous rice wine has diversified into over ten varieties, including lotus root powder fermented glutinous rice wine, clear soup fermented glutinous rice wine ,egg water fermented glutinous rice wine,longan fermented glutinous rice wine and Sanxian fermented glutinous rice wine.It has become a popular soup loved by many people.
