As the autumn chill sets in, it’s the perfect time to nourish the body with seasonal foods. In Shanxi, the taste of autumn is defined in large part by the persimmon. Whether in bustling markets or quiet village courtyards, those shades of orange-red not only brighten the season but also warm the hearts and palates of Shanxi locals.

As a key region for persimmon cultivation in northern China, Shanxi, with its unique mountainous climate and fertile soil, nurtures various persimmon varieties, each with its distinct flavor. These fruits have become an indispensable symbol of autumn in this loess land.

永济古属蒲州,素有“柿乡”美誉。这里种植柿树的历史长达约1500年,明清时更被列为贡品。永济青柿个大皮薄、肉细多汁、无籽甘甜,脱涩容易。鲜食清甜,制成柿饼后霜厚绵软,掰开时甚至能拉出一尺多长的油丝,甜润入心。

Yongji, historically part of Puzhou, is renowned as the “Land of Persimmons.” Persimmon cultivation here boasts a history of about 1,500 years, and during the Ming and Qing dynasties, they were even listed as tributes to the emperor. Yongji Green Persimmons are large with thin skin, fine texture, juicy flesh, seedless, sweet, and easy to remove astringency. Eaten fresh, they are refreshingly sweet. When dried into persimmons, they become thick with a white bloom, soft and moist, capable of pulling strands over a foot long when broken apart—a truly sweet and rich experience.
