Eating zongzi during the Dragon Boat Festival is a thousand-year-old custom, and on Shanxi's Dragon Boat Festival tables, the one true local delicacy is the Qingtang millet zongzi from Linxian County. Crafted through a 700-year-old traditional technique, it is made with mountain spring water, reed leaves, local millet, and Tan dates, bound with Chinese iris leaves and steamed. When cooked, the golden millet grains are distinct, glossy, and lustrous, with red Tan dates embedded within. One bite and the millet's grainy texture dances between your teeth – soft and sticky yet delightfully chewy, as if performing on your tongue.

In the Datong area, cold cake (lianggao) is a popular treat. Made with glutinous rice, ordinary rice, or millet, paired with red dates and candied jujubes, it is steamed rather than wrapped. Fresh reed leaves line the bottom of the steamer, with layers of glutinous rice and millet stacked on top, filled with red dates, candied jujubes, and raisins.
